Tuna Salad is a regular Sunday-after-church meal in our home. It's quick, easy, healthy and fills our bellies so I don't have to worry about making a big dinner on Sunday! I always ate the regular tuna, mayo, relish, egg recipe until I found this one! Adding curry powder and parmesan sounds strange, but is just delicious!
I also don't prefer the type of tuna that is really mayo-heavy. I prefer to taste the tuna and have it be a bit dryer overall. So when you make this, feel free to add more mayo to your own liking.
Let's get started! Ingredients:
- Albacore tuna (I can get a can at our Aldi store for just over $1, so this is an affordable meal!)
- 1/4 cup olive oil mayo (you don't have to use that kind, but we prefer it)
- 1/4 cup sweet relish
- 1 Tbsp parsley (I always use dried)
- 1 tsp curry powder
- 1 tsp dill
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- Parmesan cheese (as needed)
- Bread (you can use simple sandwich bread, or you can use the soda bread like my recipe (HERE) or even just saltine crackers.
Instructions:
- Open tuna cans and drain thoroughly.
- In a small bowl, mix tuna and all other ingredients until combined.
- Optional ways to serve:
- Put on a piece of bread and sprinkle some parmesan and then toast in your toaster oven or oven just until melted (our families favorite way).
- Mix in some shredded parmesan and serve on your favorite bread or cracker.
- Skip the bread and put on a piece of lettuce and eat that way!
- Serve with my macaroni and cheese recipe (HERE) or with your favorite chips or a salad or fruit, etc.
