Cheesy Beef Goulash

"Cheese and Beef..." what else do you need in a meal, right?! This Cheesy Beef Goulash is one of my kid's favorites. They gobble it up every time I make it. It's such an easy meal that I can quickly whip up during the week. Add a salad and you have a great meal for the family that leaves their bellies full and often feeds our family of 6 two nights. I doubt it will feed us for two nights once they are all teenagers, but it almost works now!



Let's get started.


Ingredients:

2 lbs ground beef (to make even healthier with less fat, you can do 1/2 ground beef and half ground turkey).

1/2 onion, chopped

3 tsp minced garlic

3 cups water

2 cans tomato sauce (8 oz cans)

2 cans diced tomatoes (15 oz, or 1 big 28 oz)

3 bay leaves

3 Tbsp soy sauce (I use low-sodium)

1 tsp season salt

2 Tbsp Italian seasoning

2 cups elbow macaroni

1 cup shredded cheddar cheese


Instructions:

- Saute onion in a teaspoon of olive oil over medium-high heat. After a couple of minutes, add ground beef.

- Drain any excess fat off meat.

- Add garlic and saute for a few minutes.


Add water, tomato sauce, diced tomatoes, Italian seasoning, bay leaves, soy sauce, and season salt. Stir well and cook for a few minutes.


- Add uncooked elbow macaroni, stir well, and cover.


- Simmer for 25-30 minutes.

- Turn off the heat, remove the bay leaves and add the cheddar cheese right before serving.
