Chocolate Cake Doughnuts

These are just so delicious! Personally, I am not a fan of fried donuts. Yes, they taste DELICIOUS, but they just don't agree with me! A cake doughnut is also delicious and definitely agrees with me! So let's get baking!


The secret to making doughnuts at home is the donut pan! These are not too expensive at all! You can find them at Target, Bed Bath and Beyond, Amazon, etc. I have 2 so I can make 12 donuts total.


Ingredients (for 12 donuts)

1 cup all-purpose flour

1 cup whole-wheat flour (you know I love to sub whole wheat flour whenever I can!)

1/2 cup unsweetened cocoa powder

1 tsp baking soda

1/2 tsp salt

1 cup low-fat buttermilk (you can make your own by mixing 1 Tbsp lemon juice with the cup of milk.

3/4 cup dark brown sugar

2 eggs

4 tsp unsalted butter, melted

4 tsp applesauce (you can use just 8 tsp butter if you prefer)

1 tsp vanilla extract


Instructions

- Heat oven to 325F. Coat doughnut pans with nonstock cooking spray

- In large bowl, whist flours, cocoa, baking soda and salt.

- In small bowl or liquid measuring cup, melt butter and then add buttermilk, brown sugar, eggs and vanilla.

- Add milk mixture to flour mixture; whisk until blended and smooth. Because of the whole wheat flour, the batter will be a bit thicker.


- Spoon batter into doughnut pan and gently smooth tops. I always just use my clean finger and a fork. You could also try to put the batter into a ziploc bag and then squeeze the batter into the pan. However, when it's thicker that's more challenging.

Bake at 325F for 13 minutes, until doughnuts spring back when lightly pressed. Cool in pan on rack for a few minutes and then carefully put them on a rack until cool.


Now it gets exciting! The toppings! I love chocolate frosting and then you can add sprinkles, crushed peanuts, coconut, etc.!


Chocolate Frosting:

1 Tbsp unsweetened cocoa powder

3 Tbsp milk

2 1/4 cups confectioners' sugar (powdered sugar)


**Note: You can also make Vanilla doughnuts. Follow the above recipe, but use 2 1/2 cup flour and remove the cocoa.

Same with vanilla frosting, just omit the cocoa.


I make the icing in a wider bowl and then dip the cooled doughnuts into the icing and turn the doughnut as the extra frosting falls back into the bowl. Then, put on a plate and sprinkle on your other toppings and EAT!
