Healthy Baked Chicken Fingers with Honey Dijon Dipping Sauce

Well, I've made these twice now and they are SO delicious! The entire family gobbles them up and asks for more! They are SO easy to make. You can have these done from start to finish in about 30 minutes. Add some homemade french fries and steamed veggies or a salad and you have a quick, healthy meal for the family!


Ingredients:


Panko breadcrumbs

Whole Wheat breadcrumbs

Total mix of the two breadcrumb types at 1 1/2 cup

Oil spray

2 lb. Chicken tenderloins (or chicken breast and then cut to tender size)

1 egg

1 Tbsp mayonnaise

1 1/2 Tbsp dijon mustard

2 Tbsp flour

1/2 tsp salt

Pepper


Instructions:


- Preheat oven to 390F

- Spread breadcrumbs onto baking sheet with parchment paper and spray with oil spray (make sure you stay vertical so they don't blow all over!).

- Bake for 2-3 minutes until lightly browned. Transfer to a shallow dish.


Mix the egg, mayonnaise, dijon mustard, flour, salt and pepper together in a large mixing bowl.


- Add the chicken and stir until the chicken are all coated.




- Prepare a baking sheet with rack (if you have it). If not, it's no big deal. Just make sure to turn half way through the cooking time. If you do use a rack, make sure and spray with oil spray to prevent sticking.

- Use tongs and take a piece of chicken from the liquid batter and then place in the breadcrumbs and cover entirely.

- Place on rack.


- Bake for 15-20 minutes until golden brown.

- Serve with favorite sauce!

Barbeque is simple and easy, ranch would be delicious! But, what I've made is a honey-dijon sauce.


Mix 1/3 cup mayonnaise, 1-2 tsp lemon juice, 2 Tbsp dijon mustard, 2 Tbsp honey and salt/pepper to taste. Mix until creamy and serve.
