Simple and Quick Scrambled Eggs with Veggies

Our family has a weekly tradition... every weekend we have a BIG breakfast both Saturday and Sunday. Typically my husband and I still get up early to exercise and we know we will be busy and lunch will be later, so we always have a big breakfast. We LOVE eggs. Scrambled, fried, hard-boiled, poached, etc. we love them! The kids love them. So, it's an easy choice.


This is the easiest thing you can do to add to your eggs without the time-consuming omelettes (which we also make on ocassion).


Pick your vegetables. We always use onion and pepper. My husband and oldest son love mushrooms, so I always saute those for them. If it's summertime, we always have kale in the garden and I will add a ton of that!


Dice up your veggies, however much you want. I typically saute the veggies and then put about half on my plate!



For our family of 6, I usually use 9 eggs. I scramble those up, add a few tablespoons of water and add right into the veggies. Gently stir as they scramble. Add any herbs you love. I sprinkled "Italian seasoning" on the eggs. Once they are done, I plate and sprinkle with shredded cheese. If we have an avocado in the house, we slice that on top too!
